I mentioned tonight on Twitter that I was making "porcupine burgers" for dinner and got more then one curious response and several requests for the recipe so I figured I'd post it here. This was a Chapman staple growing up. It was cheap, one pot and easy to make and have left overs from. Grab a pressure cooker and give it a try. Chapman Porcupine Burgers (8 servings)
- 2 lbs Ground Beef
- 1 cup Uncooked White Rice
- 2 T Minced Onions
- 2 T Salt
- 1/2 T Black Pepper
- 2 10 1/2 oz. cans Tomato Soup
- 1 1/4 Cup Water
Instructions:
- Combine meat, rice, onion, salt & pepper in a bowl and mix with hands
- Form into balls (ours end up about the size of a tangerine)
- Mix soup + water in a pressure cooker
- Place meat balls in the cooker
- Cover and cook on high until the control starts to jiggle
- Reduce heat and cook for 10 minutes
- Remove from heat and let stand for 5 minutes, then remove pressure in the sink with cold water.
- Cut meatballs in to pieces on top of a peace of plain white bread and cover with sauce
- Enjoy!
